In addition to upgrading your coin making capacity, you need to spend some time figuring out how to get the right layout in place so you can get more customers in the restaurant without causing service to suffer. Your maximum number of employees is 8 and those 8 employees can only do so much. If you have too many customers, service time will drop and you will have a hard time keeping everyone happy, resulting in a lower popularity score and less coins.

Additionally, you will need to be sure that your employees always maintain high energy levels. If those energy levels dip too low, they will quickly begin to serve slower and fall behind the curve, resulting in less popularity and fewer customers – which in turn costs you coins.

As you can see, the key to riches in Restaurant City is directly tied to maintaining a tight control over all the aspects of the game. You need to have a good restaurant layout. You need to have a good menu with high level dishes. You need to keep your employees rested and fed. You need to keep an eye out for the different ways in which you can upgrade your restaurant without hurting your customer base.
