Each year, more and more people are being diagnosed with wheat and gluten allergies. The only option for them to find relief from their symptoms is to switch to gluten free eating. Gluten free diets are recommended for sufferers of celiac disease, gluten intolerance, Lyme disease and wheat allergies. Some migraine sufferers claim to have seen positive results from changing to a gluten free diet, and even the parents of some autistic children are seeing a difference.
So, what’s it all about? A gluten free diet is one that that cuts out all types of food containing gluten. Gluten is a protein compound found in several grains, most notably wheat, barley and rye. Around the world, gluten is an important source of protein, not only as a food source, but also as an additive to foods that are lower in protein. Gluten is what makes bread dough stretchy and elastic, and what makes bagels and pizza dough so nice and chewy.
Unfortunately, some people seem to have problems processing gluten, and it’s causing health problems for many. The solution, as mentioned, is to change to a gluten free diet. However, it becomes very difficult when so many foods contain some form of gluten, often in places you wouldn’t think to look – for example, many fried foods are breaded with flour made from wheat which contains gluten.
